What seems to pop up most often when diet is discussed in the articles and the news reports on places like Okinawa and Icaria is leafy greens and legumes. This makes sense because they are a prominent in the Mediterranean Diet, and for the same reason: heart health, colon health, antioxidants.

Not bad! If I had them at hand when I made the recipe up, I'd've added some sort of leafy green, like kale or swiss chard, too.
