Buffalo Pasta Recipe

Recipe: Buffalo Pasta

Okay, this one's not as healthy as other recipes. It's not Mediterranean, but it is vegetarian.

1/2 box whole wheat pasta, cooked al dente - set aside about 1 cup of the drained starchy water
2 tbs butter
1 tbs olive oil
1 tbs Lousiana hot sauce
1 heaping tsp garlic
1 heaping tsp paprika
1/2 tsp red pepper flakes
1/2 tsp dried basil
salt & pepper
1 diced red bell pepper
1 package frozen peas (2 cups)
1 package of Morning Star Farm "buffalo chikn wings"
1/2 cup bleu cheese dressing
1/4 cup ketchup
1/2 to 1 cup pasta water

Mix water, dressing and ketchup in a small bowl and set aside.

Next the frozen peas in a bowl and run some water over them, drain out most but not all of the water and then break the peas apart. Next, set half the buffalo wings on a plate, zap for 45 seconds then do the same with the second half of the fake chikn. Chop each piece into 3-4 pieces, then set aside.

In a large sauce pan, heat butter, oil, and hot sauce over med high heat. Add paprika, pepper flakes, basil, salt and pepper. Stir well and add red pepper and garlic. Heat until red pepper softens, about 2 minutes, stirring occasionally. Add the peas and Morning Star wings, stir everything well, cover and turn to med-low heat. Cook about 3-5 minutes. Taste a pea and a piece of pepper to see if they've picked up the flavor of the spices and they are tender. When ready, add the pasta, the water, the dressing and the ketchup. Stir then turn to low heat, cover and simmer about 5 minutes.

A NOTE ON THIS RECIPE

This recipe has it's weaknesses - bleu cheese dressing, ketchup, breading from fake chikn, butter - but it has its redeeming qualities, too: whole wheat pasta, fresh bell pepper, lotsa peas, olive oil, soybean protein...

I don't make it all the time, for sure, but it tastes so good. It's one of the few dishes I make that Meat-Loving people absolutely love. The other is my gourmet mac n cheese...which has nothing on this recipe when it comes to "unhealthy"...
