Recipe: Mushroom and Sundried Tomato Mock Risotto
1 packet of brown boil-in-bag rice leaving four minutes off the instructed cooking time
1/2 c. Mushroom Gravy
1 heaping tbs Dried Tomato from Tastefully Simple -or- 1/4 c. marinated sun-dried tomato, like from Pastene
1/4-1/2 c. broth or water
salt and pepper to taste
After rice is boiled separately, add almost cooked rice, mushroom gravy and sundried tomatoes to skillet plus tbs of water/broth. Stir and simmer about 5 mins, stirring occasionally. If rice is absorbing too much moisture (perhaps sticking to the bottom of the pan), just add some more water/broth in tbs until at satisfactorily moist. Season with salt and pepper to taste. Serve and enjoy.
